Spiralize two zuccini's
Cube a cucumber, red bell pepper and a large tomato
Chop two baby bok choy, some green onions, some cilantro, a garlic clove and a half tsp of fresh jalapeno
Grate a Tbls of ginger root and a 1/2 tsp of horseradish root
Mix together in a large bowl, sprinkle with a pinch of red chili flakes.
Marinate the dish in two Tbls of Nama Shoyu, 1/4 C of apple cider vinegar and 1/2 C olive oil for an hour or more.
Adjust proportions according to taste
I'll admit that I don't really measure anything, so all of my measurements are guess work ; )
